🐾 Weekly Recap — In Case You Missed It! This week brought a mix of throwbacks and Mischa mischief.
1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
2. In a bowl, whisk together oat flour, baking powder, cinnamon, and optional supplements.
3. In another bowl, mix applesauce, eggs, honey, and cubed carrots until well combined.
4. Gradually add the wet ingredients to the dry ingredients, stirring until combined.
5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
6. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
7. Let them cool completely before serving or frosting.
Storage
Store in an airtight container in the refrigerator for up to 7 days.

Yogurt & Peanut Butter Frosting
Ingredients
– ½ cup plain Greek yogurt
– 2 tbsp peanut butter (XYLITOL-FREE)
Instructions
1. In a bowl, mix the yogurt and peanut butter together until smooth.
2. Add 1–2 tsp oat flour if you want it thicker.
3. Chill in the refrigerator for 10–15 minutes to thicken.
– ½ cup plain Greek yogurt or unsweetened applesauce
– 2 eggs
– 2 tbsp water
– 1 tsp baking powder

4. Roll out the dough to about ¼-inch thickness.
5. Use a cookie cutter to cut out biscuits or roll out balls of dough and flatten with a fork.
6. Place the biscuits on a parchment-lined baking sheet.
7. Bake for 10–12 minutes until firm and golden brown.
8. Let them cool completely before serving.
