– 2 cups oat flour

Instructions
1. Preheat oven to 350°F (175°C).
2. In a large mixing bowl, combine pumpkin purée, peanut butter, and egg until smooth.
3. Gradually add the flour and cinnamon (if using), mixing until a firm dough forms.
4. Roll out the dough to about ¼-inch thickness.
5. Use a cookie cutter to cut out biscuits or roll out balls of dough and flatten with a fork.
6. Place the biscuits on a parchment-lined baking sheet.
7. Bake for 15–20 minutes until firm and golden brown.
8. Let them cool completely before serving.
