Instructions
1. Scrub the sweet potatoes thoroughly with hot water and a brush.
2. Optionally, spread a small amount of butter on the bottom of a Dutch oven or casserole dish to prevent sticking.
3. Arrange the sweet potatoes in the dish and add just enough water to cover the bottom.
4. Bake at 350°F (175°C), covered, for approximately 2 hours, or until the sweet potatoes are soft. If unsure, insert a toothpick into the center of a sweet potato; it should slide in easily and come out clean.
5. Remove from the oven and allow to cool for about 1 hour.
6. Once cooled, peel and mash as desired.
